Eggs with Tomato Sauce on Toast - Breakfast in Italy

Eggs are a weekend staple for breakfast and most of us have made the usual omletes, benedicts, fried, scrambled and everything in between. I remember seeing this recipe from Giada De Laurentiis on the Food Network a few years ago and have made my version of it many times since.




This is a traditional Italian breakfast meal that is so easy to make and a little bit different from how we normally serve eggs for breaky. 

I love how the tangy tomato sauce goes with the runny smooth yoke of the egg. Crunchy toast and salty parmesean finish off this take on eggs on toast perfectly. This is also a very good choice for a hangover cure the morning after. It's easy, tasty and you can stumble through it without a lot of effort.

One of my favorite pairings with eggs is this Heinz Chili Sauce. Don't let the word "chili" fool you into thinking this is a hot mess. It is very sweet and compliments eggs nicely.

Eggs with Tomato Sauce on Toast - Breakfast in Italy
My version of eggs in purgatory. Easier and just as delicious!
Ingredients
  • 2 slices Bread of your choosing
  • 2 Eggs
  • 1 - 2 Tbsp Heinz Chili Sauce
  • a few sprays Pam
  • about 1/4 cup Parmesean cheese (shredded)
  • Salt and pepper to taste
Instructions
- Shred the parmesean cheese and heat a frying pan on the stove at medium heat- Once the pan is hot enough spray with Pam and place the bread in the toaster. Toast to your desired darkness.- While the bread is toasting, place the egg in the hot frying pan and fry to desired doneness, hard or easy.- Once the toast is done, place it on a plate and take about a Tbsp of the Heinz Chili Sauce and spread it over the toast with the back of a spoon. Make sure to spread the sauce to the edge of the toast.- Place the egg on top of the toast with chili sauce and sprinkle with parmesean cheese.- Sprinkle with salt and pepper to taste. Serve hot and enjoy!
