Perogies with Bacon & Cabbage - First Post!!


Okay, here it is my first post and recipe - let's dive in!

Perogies (or pierogis) with cabbage; how many of you think of this meal as comfort food? I certainly do because it has the hearty carbs we all crave, it's warm and filling, and if you grew up with an Eastern European heritage, this was your bread and butter.

Strangely, I never think to make this meal and I don't know why. It's very easy, great for families and inexpensive.





Ingredients - Perogies are Potato Spinach & Feta from Wal-Mart, they were really good for a great price



 Few things smell and sound better than bacon

I browned the butter a little too much, but they still turned out

And there you have it, super easy! The only thing missing is sour cream - I forgot to buy some! The cabbage cooks down and turns sweet, the bacon is smokey and rich and the perogies are crispy on the outside, fluffy in the middle.







Side note - perogies with wasabi mustard = AMAZING snack

PEROGIES WITH BACON & CABBAGE
Perogies are light and fluffy on the inside, golden brown and crisp outside. The bacon adds a smokey flavour to the sweet cabbage.
Ingredients
  • 1 Bag of perogies (whatever type or brand you like)
  • 6-8 slices Bacon
  • 1 Large onion (chopped)
  • 2-3 cloves Garlic (minced)
  • 1 tsp or to taste Salt
  • 1 tsp or to taste Pepper
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/4 tsp Paprika
  • 1 Tbsp Butter
Instructions
- Place the chopped bacon in a large pot over medium heat and cook until crispy- Drain most of the fat from the pot - leave a little for flavor - add the diced onion and minced garlic- Cook until the onions have caramelized, about 10 - 12 minutes- Add the chopped cabbage, it may seem like a lot at first but it will wilt- Cook the cabbage for 5-7 mins to combine with the onions and bacon, then add the salt, pepper, onion powder, paprika and garlic powder- Cover and cook on low heat for 30 mins- In a pan on medium-low heat, melt the pat of butter- Add the perogies, cook in batches to not crowd in the pan- Cook until golden brown, flip and cook until golden on both sides- Plate the cabbage with a few perogies. Serve with sour cream and enjoy!
