Now some of you may have tried lettuce wraps before and they are definitely a heathly option where you can really play around with the filling. You could get really fancy and cook up a Thai or Greek version, but I was not down for that so I came up with the easiest, laziest recipe for lettuce wraps on the entire Internet! * This may not be true
These were surprisingly delicious! Not that I thought that would taste like tires but really the words "lettuce" and "wraps" don't normally cause your mouth to water. I LOVED how these turned out, crispy and full flavour; best of all they are a no cook, low-carb meal.
Also, a tip for you, if you are on a second or third date and want to impress your partner with how healthy and genius you are by making these lettuce wraps......
- First, good for you, you're a boss!
- Second, don't do it! These are messy, drippy and there is no way you'll look cute eating them.
Okay here's the way you do this thing.....
True talk, you see two responsible wraps on my plate. I actually ate four. Not even mad...
Chicken Lettuce Wraps
These are on your table in 7 minutes, no joke!
Ingredients
- as many leaves as you want of Boston Lettuce
- a few Tbsp of Hummus
- shredded Rotisserie Chicken
- a few Tbsp of Pico De Gallo
- shredded Cheddar Cheese
- a few Tbsp Greek Yogurt or Sour Cream
- a few squirts (optional) Sriracha
Instructions
- Wash the leaves of the Boston lettuce- Pat dry with paper towel and spread the hummus in the middle of the leaf- Rip some of the Rotisserie Chicken off the carcass (ew, hate that word) and pull it apart and place on top of the hummus- Place the Pico De Gallo over the chicken (I like to use a fork to drain some of the liquid off)- Shred the cheddar cheese and place over the top of this gorgeous wrap- If you want to kick it up a notch (good for you for going there) squirt some Sriracha over top of the wrap and emrace your ugly eat face!
